How Does It Hold Up?
The short answer is, IT DOESN'T (see the pic below). However, there are some things to consider before you just dismiss the idea of grip tape all together.
First off, not all grip tape is made equal. Some companies manufacture their tape from stronger materials. For instance, Nihilo Concepts seems to be a pretty popular brand that holds up a little more than others.
Also, this is one of those parts that you have to expect is going to wear out FAST. If you go into it knowing that, then you won't be so bent out of shape when your grip tape is shredded after one moto. Seriously, one.
I've only used two different types of tape, but both have broken down EXTREMELY quick. I'm talking, maybe, two 15 minute motos and the stuff was completely toasted. I noticed significant wear after only one moto.
Pro teams have this stuff in bulk and if the tape they have on the bike is damaged, they throw a new strip on there. So really, it always looks like it's new and gives the illusion that it holds up.
As you can see from my photos below, this tape was destroyed on the left side after only 1 moto. By the time I was done with the second moto, it was done. If you look close, even though the tape wasn't completely worn through, the textured surface was gone.
